Tell us about you and your blog.

I’m a Registered Dietitian and soon-to-be mom of two! In addition to being a busy mom, I blog on The Lean Green Bean and work part-time in nutrition communications. My blog is full of simple recipes, parenting tips, nutrition info and more. My goal is to show people that healthy eating doesn’t have to be complicated or expensive!

What is your favorite seafood dish to make at home or order at a restaurant?

When we’re out to eat, I love to order scallops, and I can rarely resist a crab cake for an appetizer. At home, I tend to stick to dishes like Thai Chili Salmon and Tuna Quinoa Cakes.

Any words of wisdom for parents who have picky eaters? How did you get your kid(s) to eat seafood?

I started introducing seafood to my son at a very young age, and I always serve it with a dipping sauce he likes. Even if that means serving tuna with ketchup, which sounds gross to me!

Why is seafood so beneficial for everyone, especially kids?
It’s such a great source of healthy fats, which are super important for brain development in kids. Plus, it’s a good source of lean protein as well.

What is your go-to seafood meal for busy nights?

Salmon brushed with some thai chili sauce and baked for about 20 minutes. Serve with rice and veggies for a quick, easy dinner.

What’s next on your “must-make” seafood list?

Seafood paella – I haven’t been brave enough to try making it yet!
