Shrimp Gumbo

Ingredients

  • 1 tsp. olive oil
  • 1 red onion, finely chopped
  • 2 garlic cloves, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • ½ lb. chicken sausage, kielbasa-style, cut in ¼-in round slices
  • 1 (14½ oz.) can diced tomatoes, undrained
  • 1 cup reduced-sodium chicken broth
  • 2 cups okra, trimmed and cut into rounds
  • 2 bay leaves
  • 1 tsp. Italian seasoning
  • ½ tsp. cayenne pepper
  • ¼ tsp. salt
  • ¼ tsp. ground black pepper
  • 1 lb. medium shrimp, peeled and deveined
  • White rice for serving

Instructions

  1. In a large saucepan, heat oil over medium heat and sauté onion, garlic and bell peppers (about 2 minutes) until tender. 
  2. Stir in sausage, cook 4 more minutes. 
  3. Stir in tomatoes (including liquid) and chicken broth. 
  4. Add okra and seasonings and bring to a boil. 
  5. Add shrimp, and cook about 4 more minutes. Discard bay leaves. Serve over rice.
