- 1 tsp. olive oil
- 1 red onion, finely chopped
- 2 garlic cloves, minced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- ½ lb. chicken sausage, kielbasa-style, cut in ¼-in round slices
- 1 (14½ oz.) can diced tomatoes, undrained
- 1 cup reduced-sodium chicken broth
- 2 cups okra, trimmed and cut into rounds
- 2 bay leaves
- 1 tsp. Italian seasoning
- ½ tsp. cayenne pepper
- ¼ tsp. salt
- ¼ tsp. ground black pepper
- 1 lb. medium shrimp, peeled and deveined
- White rice for serving
Instructions
- In a large saucepan, heat oil over medium heat and sauté onion, garlic and bell peppers (about 2 minutes) until tender.
- Stir in sausage, cook 4 more minutes.
- Stir in tomatoes (including liquid) and chicken broth.
- Add okra and seasonings and bring to a boil.
- Add shrimp, and cook about 4 more minutes. Discard bay leaves. Serve over rice.
