April Meal Plan

Happy April, seafood lovers! Fresh, light flavors are what springtime is all about, so we’re kicking off this month with some seasonally inspired dishes. Cue a few of our favorite ingredients: citrus fruits, avocado, asparagus and broccoli.

Did you know that most Americans eat too little seafood and too few veggies? By enjoying them together using the delicious recipes laid out in our April Meal Plan, you’ll get a power-packed nutrient bang! And we’ve left no meal behind, giving you the best of breakfast, lunch and dinner. Our goal: to have you out of the kitchen as quickly as possible, so there’s plenty of time for an after-dinner bike ride or walk in the park with the dog.

A melt-in-your-mouth example of a quick and easy dinner dish would be I Wash You Dry’s Skillet Tilapia with Shrimp. A two-for-one seafood celebration, this dish manages to give you layers of flavor with simple ingredients and easy-to-make instructions. The best part? You only need one pan to make it happen!

And when the weekend rolls around, make seafood the star with Rants From My Crazy Kitchen’s Baked Seafood Stuffed Avocados for brunch. Another standout, Kim’s Cravings’ stunning Southwestern Salad made with Alaskan Pollock, pairs perfectly with mimosas followed by a game of kickball or bocce. Who’s on your invite list?

Get your spring jumpstarted with seafood, fruits and veggies – and then get outside! It’s finally spring!
