Now that grilling season is in full swing, let’s get some seafood on! If you’ve never tried our Seafood Supper Club recipe for Grilled Mediterranean Cedar Plank Salmon Gyros, then make it tonight! This gyro showcases all we love about the Mediterranean diet—fresh veggies, heart-healthy olive oil and salmon, of course! Grilling salmon on a cedar plank gives it a wonderful, smoky flavor and putting it in a soft pita makes it ideal for al fresco dining. Trust us, this recipe’s a keeper!

Cooking on a cedar plank is a breeze and planks are widely available. First, soak the plank for about an hour and place the salmon and seasonings right on top. (Soaking the cedar plank helps it not catch on fire while over heat.) Then, char it over direct heat until the plank starts to smolder, move it to indirect heat and cover the grill, letting the cedar smoke infuse the salmon. The plank provides a heat barrier, so the fish steams gently. Once the salmon flakes easily—in about 15 minutes—it’s ready to plate. Store-bought tzatziki and whole-wheat pitas streamline the prep, so assembly is easy-peasy. Bonus: cleanup is a breeze! You can use this same method to cook virtually any fish.


Cedar plank grilled salmon works especially well with this Greek-inspired combination of veggies, briny olives and tangy yogurt. And nutritionally speaking, salmon is a superfood! It offers 20-plus grams of protein per 4-ounce serving plus plenty of omega-3 fatty acids, which can help reduce inflammation, lower triglycerides and boost heart and brain health. Grilled Mediterranean Cedar Plank Salmon Gyros

Prep time: 1 hour (mostly unattended)

Cook time: 20 minutes

Total time: 1 hour, 20 minutes

Servings: 4


  • 1 pound boneless salmon fillet
  • 1 lemon, halved
  • 1 teaspoon olive oil
  • 4 whole-wheat pitas or 4 slices flatbread
  • Store-bought tzatziki or cucumber-dill sauce
  • 1 cup baby spinach, torn
  • ½ cup cherry or grape tomatoes, halved
  • ¼ cup pitted Kalamata olives, halved or sliced
  • Feta cheese, for garnish (optional)
  • Salt and pepper, to taste

  1.    Soak cedar plank in water for an hour.
  2.    Season salmon with juice from half of lemon, olive oil, and salt and pepper. Set aside while plank soaks. Cut other half of lemon into thin slices.

  1.    Heat grill to medium-high, close lid. While grill is heating, place salmon on cedar plank and top with remaining lemon slices. Place plank on grill, directly over heat, for 3-4 minutes, until plank starts to char.

  1.    Using tongs, transfer plank to indirect heat on side of grill; cover grill and cook for 12-15 minutes or until salmon is cooked. Warm pitas or flatbreads on grill, about 1-2 minutes per side.salmon gyros - Salmon gyro
  2.    Place warmed pitas or flatbreads on plates. Spread tzatziki sauce over each pita/flatbread, cover each with baby spinach, tomatoes and olives, and top each with salmon. Garnish with feta, if desired. Fold and enjoy.
