We love preparing soup this time of year because it makes us feel warm and cozy. It’s also a huge time-saver and can be prepared in advance for a quick and filling meal. To help take your taste buds on a world tour of flavors, we’ve rounded up four of our favorite seafood soups. Consider yourself warned – this post might just have you daydreaming about your next vacation!
First up is Tasteaholics’ simple Mexican-inspired Seafood Soup featuring bright flavors that will warm you right up. Their recipe combines cod, calamari and shrimp with a blast of fresh spices for a dish that will you have you saying, “Muy bien!”
If you’re in the mood for something even heartier, Food Banjo has a Lemon Orzo Soup with Shrimp that is incredibly scrumptious. If you’ve never used orzo before, it’s a tiny cut pasta that is shaped like a large grain of rice – find it in the pasta aisle! The flavors in this recipe are delicious and the ingredients are paleo-friendly, so we have a feeling it will become a regular in your dinner rotation.
Perhaps you’d be more on board with something packing a Far Eastern kick? If so, Fearless Eating has the answer with its Gochujang Soup. This hot dish combines savory shrimp with the intense flavors of gochujang, a sweet and spicy red pepper paste from Korea that’s perfect for mixing into soups. If you can’t find Gochujang, you can make a paste of 1 teaspoon red chili pepper flakes moistened with soy sauce and add a little sugar. If you like heat, then this one is for you!
Wrapping up our soup tour is Cioppino from In Good Flavor. This dish, known as “Fisherman’s Stew,” is Italian-American, hailing from California! But the flavors are so deliciously Italian, it will take you to Italy with just one bite. Cioppino calls for mussels, shrimp, bay scallops (these are the small ones) and white fish. Pro Tip: When making this recipe, you can grab the shrimp and white fish from your stash in the freezer and purchase the bay scallops and mussels fresh. You can make this stew with any seafood you’d like!
