Surimi: What is it and how do you cook it?

Surimi: You may have heard of it and you’ve likely seen and tasted it. Today we are giving the 411 on this protein that is an alternative in recipes that call for crab. Affordable, convenient and versatile, this tasty seafood product requires minimal prep work and can be easily found in the refrigerated seafood section of the grocery store.

Surimi is made from white fish – typically Wild Alaska Pollock. In the U.S., it is most often flavored and shaped to resemble a crab leg or flaked crab, with a taste similar to crab, shrimp or lobster.

Surimi is low in calories, saturated fat and cholesterol and provides protein and the minerals phosphorous and selenium. Phosphorous is important for healthy bones and teeth, while selenium is an important immune system-boosting antioxidant. If you avoid shellfish but enjoy the taste of crab, surimi is a good alternative. If you have food sensitivities check the label on individual surimi products.
