You Need To Try These Baked Salmon Sushi Cups

We’re not ready, Seafoodies!!!

Somehow the back-to-school commercials are already in full swing, your social media feeds are flooded with “where did summer go?” posts, and every store aisle is loaded down with colorful folders and pencil cases. That slight shift from lazy summer days to “wait, school starts when?!” panic is real! While you’re mentally preparing for the return of homework battles and early morning alarms, we’ve got something that’ll make those after-school snack attacks way more manageable—and infinitely more impressive.

We’re about to blow your mind with a snack that’s about to earn you some serious cool points with your kids (and maybe their friends too)—our brand new Baked Salmon Sushi Cups. These bite-sized savory treats combine all the fun of sushi with the convenience of grab-and-go portions. Kinda like a deconstructed sushi roll that is 100% doable—even as you see the bus rolling down the road. Imagine 25 minutes from start to finish, which means you can still whip up a batch while the kids are doing homework or between soccer practice pickups. 

We’ve always been big fans of nori sheets as a no-frills nosh—but kinda think we deserve an A+ for figuring out they make excellent little filling cups when baked in a muffin tin (brilliant, right?). Each one holds a healthy portion of sushi rice and seasoned salmon that gets marvelously tender in the oven. But let’s not forget about all the good nutritional stuff that growing kids need too! Salmon also delivers high-quality protein for developing muscles and brains, plus those all-important omega-3s that support everything from focus to mood. Sushi rice adds some energy to fuel after-school activities, while the avocado brings healthy fats and vitamin C, E and beta-carotene to the table—which help strengthen the immune system and protect against illness.

If your little Seafoodies are already sushi lovers, they might like an extra drizzle of sriracha, but for beginners, you can omit it completely for a fun introduction to Japanese flavors without any intimidation factor. It’s also fair to say that the end-of-the-day snack attack doesn’t only strike the kiddos in our lives. We weren’t surprised to find that the adults in our test kitchen kept sneaking extra cups for themselves! Turns out, grown-ups are as charmed by these adorable, bite-sized creations. Don’t feel guilty if you find yourself making a batch “for the kids” but conveniently eating half of them yourself—we won’t tell.

Baked Salmon Sushi Cups

Baked Salmon Sushi Cups

  • Total Time: 25 minutes
  • Yield: 12 sushi cups 1x

Ingredients

Scale
  • pounds salmon fillet, skin removed and chopped into 1-inch cubes
  • 2 Tablespoons soy sauce or coconut aminos (for gluten-free)
  • 1½ Tablespoons mayonnaise
  • ½ Tablespoon sriracha or other hot sauce, plus some for garnish
  • ¼ teaspoon kosher salt
  • 1 cup cooked short-grain rice, such as sushi or jasmine rice
  • ¾ teaspoon rice vinegar
  • 12 Nori squares or 3 large Nori sheets (cut into quarters)  
  • ½ avocado, finely chopped
  • 2 Tablespoons chives, chopped 
  • 1 Tablespoon sesame seeds

Instructions

  1. Preheat oven to 400 F degrees. 
  2. Combine salmon, soy sauce or aminos, mayonnaise, sriracha and salt in a large bowl. Toss gently to mix, until all ingredients are coated well.
  3. In a medium mixing bowl, combine rice and vinegar; stir gently until rice is coated with vinegar.
  4. Place nori squares on cutting board or counter. Top the square or sheet with about 2 Tablespoons of the rice mixture, then gently place inside the lightly greased muffin tin, so that the sides of the nori sheets stick up a little outside of the muffin tin. Repeat with the remaining 11 squares.
  5. Next, place about 2 Tablespoons of the salmon mixture on top of the rice mixture for all of the muffin cups.
  6. Place in oven and bake for about 15 minutes, or until salmon is cooked through. Remove from oven, top with chopped avocado, chives and sesame seeds. Drizzle sriracha sauce on top, if desired.
