Hey, Seafoodies!
There’s not much actual “time” in “mealtime,” right? In our experience, mealtime often has the nerve to show up like a surprise guest when you have the least amount of time to spend cooking and eating a meal. That’s why we’re huge fans of “prep-and-pop” seafood dishes—convenient dishes that can be prepared when you do have time to cook and popped into the oven or microwave later, when you don’t. Hunger annihilation on demand! Once you embrace this stress-free way of cooking (and eating!) it only makes sense to incorporate meal prep into your bag of tricks. Cook once, enjoy many times. It’s a Seafoodie game-changer!
One of our fave meal-prep recipes, hands down, is Loaded Shrimp and Burrito Bowls. We’d be hard-pressed to come up with an easier, more lip-smacking way to get our recommended 2 to 3 servings of seafood a week. We admittedly fell hard for this dish that’s zesty, good for you and pre-portioned for effortless planning. This convenient, 30-minute dish also gets bonus points for using many ingredients you might already have on hand in your pantry or freezer.
On its own, shrimp is so versatile and convenient that you might think it leaves little room for improvement. And you’d be right! But if you’re a regular Dish on Fish reader, it should come as no surprise that we’re always looking to up our game. Make no mistake: These bowls really are loaded. Packed with satisfying protein (plump shrimp, black beans and nutty brown rice), bursting with flavor (aromatic veggies and Tex-Mex spices like chili powder and cumin) and supercharged with nutrients (including vitamin B-12 and essential minerals like selenium). They’re totally shrimp-tastic!
