How To Make Our 25-Minute Baked BBQ Salmon

This Baked BBQ Salmon is the answer—on the table in 25 minutes, mostly hands-off and flavorful enough that nobody’s pushing it around their plate.

Why does it work so well on a chaotic night? It’s simple! The oven does the heavy lifting. Your salmon bakes under foil for 15 to 17 minutes with zero babysitting required, which frees you up to referee homework, unpack lunchboxes or just catch your breath. While the fish cooks, the sauce comes together in one quick whirl of the food processor—no simmering, no stirring, no extra pots to scrub.

And speaking of that sauce—it’s absolutely incredible! We’re skipping the bottled BBQ and blending fresh mango with chipotle peppers, garlic, a little brown sugar and a splash of rice wine vinegar for a sweet-smoky-spicy combination that tastes far more impressive than store-bought options and without any additives or hard-to-pronounce ingredients included. The mango keeps it kid-friendly with natural sweetness, while the chipotle adds just enough warmth to make things interesting for the grown-ups. Spread a spoonful over each fillet, scatter on some chopped mango and green onions and dinner is just one more thing you can confidently cross off that hefty to-do list!

Mango Chipotle BBQ Salmon

Ingredients

  • 4 (6-ounce) salmon fillets
  • Salt and pepper, to taste
  • 1 mango, peeled and cubed
  • 1 clove garlic
  • 2 chipotle peppers in adobo sauce
  • ½ cup ketchup
  • 2 tablespoons packed brown sugar
  • 1 tablespoon rice wine vinegar
  • Chopped mango and green onions for garnish (optional)

Instructions

  1. Preheat oven to 400 degrees. Spray 9 x 13-inch pan with nonstick cooking spray. Place the salmon in the pan, cover with aluminum foil and bake for 15-17 minutes, until the salmon is opaque in the center. (I like to remove the aluminum foil the last few minutes of baking, to brown the tops of the salmon.)
  2. While the salmon is baking, place mango, garlic, chipotle peppers, ketchup, brown sugar, and rice wine vinegar in a food processor. Pulse until sauce is smooth.
  3. Spread about 1-2 tablespoons of sauce over each baked salmon. Garnish with chopped mango and green onions, if desired.
  4. Salt and pepper to taste.
