The Best Easy Dinner: Air Fryer Lobster Burgers

Few mealtime announcements generate such enthusiastic responses as “burgers for dinner!” Those three simple words can instantly transform even the most challenging eaters into eager dinner participants. In our household, burger night has always been the great unifier, the meal proposal that gets zero objections and plenty of excitement.

While we always love a good salmon or shrimp patty for their lean protein perks, we recently found ourselves craving something that felt a bit more sophisticated. This led us to a delicious dilemma: How could we keep the family-friendly appeal of Seafoodie burger night while adding a touch of coastal luxury? And perhaps the bigger challenge—could we pull it off on those nights when firing up the grill somehow felt as ambitious as planning a five-course dinner party?

Our solution arrived in the form of these Air Fryer Lobster Burgers—and yes, we can already hear you thinking, “Lobster in the air fryer?” Trust us on this one. Nothing leaves the Dish On Fish kitchen until it’s been thoroughly tested, tweaked and perfected to seafood excellence.

Sweet chunks of lobster meat form the foundation, gently mixed with enough eggs and panko to bind the patties without overshadowing that delicate seafood flavor. Sharp Gruyere or Parmesan cheese adds a nutty depth, while fresh parsley brings brightness. A touch of Dijon mustard and lemon zest provides subtle tang, and a hint of cayenne pepper provides warmth without overwhelming.

And in addition to the lobster, our lemon butter aioli is the perfect icing for this delicious lobster burger. We combined melted butter with mayo, stirred in some minced garlic and fresh lemon, then added our secret ingredient—a spoonful of sweet chili sauce. The result is creamy, tangy, slightly sweet and completely delectable. Even the family members who usually reach for plain ketchup might find themselves converted after one taste of this simple yet impressive topping.

Finally, the air fryer makes this recipe remarkably straightforward—no flipping, no monitoring, no weather considerations. Simply form your patties, give them a quick chill in the fridge to firm up (5 minutes!) and then let the air fryer do its thing! A quick 8-12 minutes at 390°F and dinner is served. The entire process takes about 35 minutes from start to finish, making this an entirely doable weeknight meal when you want something special without special effort.

Ingredients – Lobster Burgers

  • 1 pound raw (fresh or thawed) lobster meat, chopped (if using meat from lobster tails, remove meat from about 4 tails – check out our Expert Guide On Selecting, Prepping & Cooking Lobster)
  • 2 eggs, lightly whisked
  • ¼ cup panko breadcrumbs (regular or gluten-free)
  • ¼ cup gruyere or parmesan cheese, shredded
  • 1 Tablespoon fresh parsley, chopped
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon zest
  • ¼  teaspoon cayenne pepper
  • ½ teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon olive oil
  • 4 Brioche or potato hamburger buns (regular or gluten-free), lightly toasted

Ingredients – Lemon Butter Aioli

  • 1 Tablespoon butter, melted and cooled
  • ½ cup mayonnaise (we like olive oil or avocado mayo)
  • 2 cloves garlic, minced
  • 1 Tablespoon freshly squeezed lemon juice (jarred lemon juice also works well)
  • 1 Tablespoon sweet chili sauce
  • ½ teaspoon lemon zest
  • ¼ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. In a medium mixing bowl, combine chopped lobster and next 9 ingredients (eggs through pepper). Mix until well combined and then shape into 4 burger patties. Cover and place in fridge for at least 5 minutes, while air fryer preheats.
  2. Preheat air fryer to 390 degrees F for 3 minutes.
  3. When air fryer has finished preheating, lightly oil air fryer basket. Place burgers in basket. Spray or drizzle olive oil evenly on top of burgers. Cook for 8-12 minutes at 390 degrees or until burgers are cooked thoroughly, appear golden and have an internal temperature of 145 degrees F.
  4. While burgers are cooking, prepare lemon butter aioli by combining all ingredients in small mixing bowl. Mix well with a clean whisk, cover, and place in refrigerator until ready to use.
  5. Spread aioli on top and bottom of lightly toasted buns, top with a burger patty and enjoy!
