We have an announcement to make: as of today, our oven is officially on semi-vacation. We’ve granted it some well-deserved PTO, wished it well and told it not to send postcards. The stovetop is welcome to join, too. Why? Because when August temperatures climb into the “let’s stay inside” range, the last thing anyone wants is an appliance pumping more heat into the house while dinner slowly comes together.

Thankfully, eating well during the hottest stretch of summer doesn’t have to require cooking at all. Cold seafood dishes are like air conditioning you can eat—instantly refreshing, deeply satisfying and ready to serve straight from the refrigerator. And unlike wilted desk salads or another round of takeout, these dishes feel intentional. They’re the kind of meals you’d happily serve to guests, pack for a picnic or stretch across a lazy Sunday of grazing.

Seafood was practically made for this no and low-heat moment. Think about the classics—shrimp cocktail, ceviche, lobster salad, smoked fish spreads. They’re all served chilled for a reason.
